Crunchy Apple Coffee Cake Ingredients: 1 Package 'Cause You're Special! Classic Muffin and Quickbread mix 1 C Whipping cream 1 Egg 2 C Chopped, peeled apple 2/3 C GF brown sugar, firmly packed ½ C Walnuts or Pecans, chopped (optional) 1 tsp. Cinnamon ¼ C Butter or margarine, melted Preparation: Preheat oven to 350°F. Grease and flour 9" - 10" round cake pan or 8" x 8" x 2" pan. Combine Classic Muffin & Quickbread mix, whipping cream and egg in large bowl. Stir until moistened. Spread half of the batter evenly in greased and floured pan. Top evenly with apple. Combine brown sugar, pecans and cinnamon in small bowl. Mix well. Sprinkle half the mixture over apple. Drizzle with 2 Tblsp melted butter. Drop remaining muffin batter by spoonfuls over brown sugar mixture. Sprinkle with remaining brown sugar mixture; drizzle with remaining butter. Bake at 350°F for 30 minutes uncovered. Then cover with aluminum foil and continue to bake 30-35 minutes. Cool 20 minutes. Serve warm. Chocolate Crackle Cookies Ingredients: 1 Small size (14 oz) package of 'Cause You're Special! Rich Chocolate Cake Mix. 2 Eggs 1 Tblsp water ½ C GF solid vegetable shortening GF Confectioners Sugar Preparation: Preheat oven to 375°F. Combine cake mix, eggs, water and shortening. Mix until well blended. Shape dough into 1" balls. Roll balls in confectioners sugar. Place on greased baking sheets. Smash slightly with palm or glass dipped in confectioners sugar. Bake at 375°F for 10-12 minutes. Makes 24 cookies. Easy Cake-Mix Cookies Ingredients: 1 Small (14.8 oz) package of 'Cause You're Special! Moist Yellow Cake mix 1/3 C GF oil 1 Egg ½ C GF Confectioner's Sugar Preparation: Preheat oven to 350°F. Combine cake mix, oil and egg in large bowl. Blend well. Shape dough into 1" balls. Roll in Confectioner's Sugar. Place on greased cookie sheet. With bottom of glass, flatten to ¼" thickness. Bake at 350°F for 8-12 minutes or until edges are light golden brown. Remove from cookie sheets and cool 5 min. Raspberry Filled Lemon Poppy Seed Coffee Cake Ingredients: 1 Package 'Cause You're Special! Lemon Poppy Seed Muffin mix 2/3 C Milk 1/3 C Oil 1 Egg 2/3 C raspberry preserves (such as Smuckers Seedless Raspberry Jam) ¼ C Sugar 3 oz. Cream Cheese Preparation: Preheat oven to 350°F. Grease 9-10" round pan. Set aside ½ C 'Cause You're Special! Lemon Poppyseed Muffin mix in small bowl. Combine remaining muffin mix, milk, oil and egg. Blend well with mixer. Spread 2/3 of batter in bottom of greased pan. Spoon preserves over batter, spreading carefully to within ½" from edge of pan. Drop remaining batter by spoonfuls over preserves; spread carefully. (Some preserves may show through batter.) Add sugar to reserved ½ C muffin mix. Cut in cream cheese with pastry fork until mixture becomes coarse and crumbly. Sprinkle mixture over batter. Bake at 350°F for 55 to 65 minutes or until edges are golden brown. Cool 45 minutes. Serve warm or cool. Lemon Cheesecake Bars Ingredients for 1st Step: 1 Small (14.8 oz.) package of 'Cause You're Special! Moist Lemon Cake mix ½ C melted butter or margarine 1 Egg Combine and press into 9" x 13" pan. Bake at 350°F for 15 minutes. Ingredients for 2nd Step: 2 C GF Confectioners Sugar 8 oz. package Cream Cheese 2 Eggs Combine and beat well with mixer for five minutes. Pour over crust when done baking 15 minutes. Then return to 350°F oven for 30-40 minutes. Sprinkle with Confectioners Sugar, if desired. Cool and cut. Peach Cobbler Ingredients: 1 Small size (14.8 oz.) package of 'Cause You're Special! Moist Yellow Cake mix 3 Tblsp butter or margarine 1 Egg ¼ C Milk 2 - 14 oz. Cans sliced peaches (reserve 1/3 cup juice) Preparation: Place two cans of sliced peaches and 1/3 cup reserved peach juice in 8" x 8" pan. Spoon cake batter onto peaches, making six mounds. Bake in 400°F oven for 25 minutes or until toothpick inserted in middle comes out clean. Creamy Apple Bars Ingredients for 1st Step: 1 Small size (14.8 oz.) package of 'Cause You're Special! Moist Yellow Cake mix. 1 Stick of butter or margarine Blend until crumbly. Reserve 2/3 cup of mixture. Press remaining cake mixture into 9" x 13" pan. Slice 3 apples (peeled and cored) and arrange over crust. Ingredients for 2nd Step: 1 Egg 8 oz. GF Sour Cream Pour over apple slices. Ingredients for 3rd Step: ¼ C GF brown sugar 1 tsp. GF cinnamon To reserve cake mix add: Sprinkle over top of sour cream mixture. Bake at 375°F for 40-45 minutes. Serve warm or cool. |
